The emphasis of our workshops are on teaching plant-based ferments and recipes, such as, fermented vegetables and wild plants, kimchi, fermented drinks and sauces.

Basic Fermentation Workshop

Our basic fermentation workshop is a good introduction to the wonderful and rich world of fermentation. This workshop gives a solid theoretical base and some valuable practical guidelines in how to ferment, in addition, by then undergoing a classical fermented vegetable recipe, we let all of this new knowledge sink in. By connecting theory with practice, this fermentation workshop is an educative, yet fun way to let yourself be “infected” by the fermentation bacteria.

Context

Get to know more closely what is fermentation, why people ferment, what are the different types of fermentations, what can you ferment.

Basics

Acquire the practical guidelines to fermenting - how to ferment, what kind of dishes and equipment to use and what to avoid while fermenting.

Kraut

Next, in collaboration with your workshops partners, learn how to prepare a fermentation classic — the simple kraut (kraut derives from the german word sauerkraut and here means any type of fermented raw vegetables).

Kimchi Workshop

Tangy, spicy, salty and full of umami goodness… Of course kimchi! This korean side dish is gaining popularity all over the world. While commonly known as being made with Chinese cabbage, then actually, in Korea, the word kimchi refers to all kinds of different fermented vegetables. Thus, there exists kimchi made from cucumber, radish and different cabbage varieties but also watermelon rinds and wild plants, roots and leaves. Allegedly, there exist more than 300 different kimchi-s!

Basics

We will start modestly by shortly going over the fermentation basics (what is fermentation, why people ferment, how to ferment, what to avoid while fermenting).

Story

Then we will dwell on the story of kimchi, talking a bit about the history and culture and different preparation methods while tasting a few kimchi-s on the go.

Practice

But hey, it is not just talk and no action. We will also walk the talk and learn to make a kimchi that will take just 2,5 hours. From now on you know how to prepare some kick-ass kimchi at home.

Kombucha Workshop

Our kombucha workshop opens up the world of the mystical kombucha - what is it, where does it come from and why it is good for you. Metsik Toit’s kombucha workshops are sensuous yet practical gatherings, where participants get to taste different kombuchas, learn how to prepare kombucha at home and ask all the questions about kombucha, tea and fermentation they have been wanting to ask but have never got the chance.
