Estonia's first miso producer made from local ingredients

Oma Miso is Metsik Toit's craft miso brand, built around a two-stage fermentation process — it all begins with preparing grain inoculated with koji culture, followed by a shorter or longer room-temperature fermentation depending on the type of miso. Our pantry is always ripening and ageing a variety of misos: short-fermented sweet shiro-style misos and longer-fermented, saltier, more umami-rich varieties.

In our recipes we use both traditional ingredients and local alternatives — domestic grains, legumes, and wild plants and mushrooms that give the misos a distinctive local flavour. Misos can be ordered, and you can get to know and make them in our workshops. We also offer the option to order a custom miso — a great option for restaurants and other food businesses.
