Northern Star — fermented willowherb tea
Product development · Metsik Toit · 2020Metsik Toit developed a range of fermented willowherb products based on the ivan chai tradition — a practice that originates with Slavic peoples and spread in Estonia through Old Believer communities, fermenting willowherb leaves and flowers into an aromatic tea. The leaves and flowers are foraged in the wilds of Haanja, hand-rolled, fermented using solar energy, and aged for several months.
Northern Star (2020) is the foundation of the series — a pure willowherb tea with floral, fruity and deep notes, a great caffeine- and theine-free substitute for coffee or tea. Fermentation transforms willowherb into a richly aromatic tea, shaped both by the method of preparation and by the unique microenvironment of its Haanja habitat.
Daybreak & Twilight — fermented willowherb tea blends
Product development · Metsik Toit · 2021These were followed by two tea blends (2021): Daybreak — an invigorating morning blend with meadowsweet, hyssop, rowan berries and raspberry leaves — and Twilight, a warm evening blend with cowslip and linden blossoms, inspired by the old Estonian custom of "keeping twilight" — a moment of rest in the evening dusk before nightfall.
